Tarragon Green Beans
The Gift
Our neighbours are 75 and 90 year old Italians who love working in their gardens, love to eat and who generously share their recipes with us. The Tarragon Beans idea is from them and is truly delicious.
The Recipe
Pick your beans while they're young (we use the French long beans for this recipe).
Drop them in boiling water for 30 or 40 seconds.
Put in a bowl.
Drizzle olive oil on them and drop in in 2 minced garlic cloves and 2 tablespoons of chopped tarragon.
Mix well and add the juice of one lemon.
Bellissima!
