Vegetarian Lasagna
Lasagna Sauce
Just about ready to enter the oven
Well, it takes a little time to prepare (actually a long time).
But it's just as delicious on the third day as on the first.
(Serves 4-6)
Ingredients
For The Nice Thick Sauce
4-5 medium sized heirloom tomatoes, chopped
4-6 garlic cloves, chopped fine
one medium sized onion, diced
2 medium-sized carrots, chopped equally medium
4-6 chard stems, chopped (find your own medium)
Tablespoon sea salt: fleur de sel, if possible
1 small zucchini or tromboncino squash, in thin slices
6-10 mushrooms, sliced
2 teaspoons fresh chopped oregano
2 teaspoon fresh chopped thyme
For the Other Stuff
9-12 Lasagna noodles (we use gluten-free brown rice ones)
6 large Swiss Chard leaves (torn in smallish bits)
6 tender Kale leaves, prepared like the Chard
8 ounces Ricotta
1 lb Mozarella
How To
For The Nice Thick Sauce
1. Carmelize the onions in olive oil.
2. Add the chopped garlic and cook the mixture on low-medium heat for a couple of minutes, stirring it while singing Nessun Dorma. Be careful not to burn the garlic.
3. Add the carrots and stir the mixture for another couple of minutes
add the chard stems & salt.
4. Stop singing Nessun Dorma.
5. Splash in a bit more olive oil & add the mushrooms, stirring them in with the mixture.
6. Pour in the chopped tomatoes and add the herbs.
7. Let the mixture simmer for about 20 minutes, stirring occasionally.
For The Noodles
1. Boil them until al dente in H20 to which you've added 2 tablespoons salt.
2. Drain & rinse the noodles with cold H20.
Layering Your Lasagna
1. This is just like lasagna garden bed-building, only tastier. Start with a layer of sauce on the bottom of your roasting pan.
2. Next, lay down a layer of noodles.
3. Add a layer of chopped-up kale & chard. Sprinkle a little Mozarella and ricotta over the chard/kale.
4. Repeat the process until you've used up all your ingredients and the top layer is noodles. Sprinkle just enough Mozarella to thinly cover the noodles.
5. Pop the lasagna into a 325˚ oven & bake for 1 hour.
Nessun dorma!
