Quinoa Salad

Quinoa salad ingredients.

Ingredients for Our Salad
1 cup of organic quinoa
A few bunches of parsley , ¼ red pepper, one medium tomato,  a few leaves of baby kale, small fresh broccoli heads
Juice of half lemon
3 tbsp. olive oil
Leftover piece of salmon baked with your own pesto sauce
A few leaves of fresh basil
French salt


How To

1. Soak one cup of quinoa in cold water for at least 15 minutes. This removes the bitter flavor.

2. Put the quinoa in two cups of cold water and bring to a boil- simmer for 10 to 15 minutes- until the outer shell comes off the seed.
3. Drain and Chill the cooked quinoa to room temperature
4. Chop all the vegetables.
5. Break up the salmon into small pieces with a fork.
6. Add all the veggies to the quinoa, stir in the olive oil and lemon juice, add the salmon
7. Enjoy at your leisure
 

Variations: No salmon? No problem. Add currants or dried cranberries or chopped olives. As a matter of fact, why not make a different quinoa salad every day. You can switch the lemon juice with orange juice for starters.
